I am poaching chicken breast in a crock pot in my powder room.
I plan to slice them over a salad of pre-washed greens and dress with Newman's Own. As you may have guessed, I am renovating the kitchen. We demoed this past weekend. This week I will get floors and cabinets. On Monday, they will measure for counters and after that, it will be a few more weeks before they are installed. Sigh.

Any hints on cooking for those with no kitchen? I have done a few barbecues, but it is too hot to mess with that today. I am also exhausted, so *easy* recipes would be most appreciated. I do have a toaster oven and microwave to work with.

3. Toaster oven chicken quarters
Just coat with Dijon mustard, or mayo and crumb (yes, MAYO), or butter, garlic and rosemary, and bake. Add a microwaved spud and a salad side and it's summer fare fit for kings. Cleanup is nothing, since you DID line that toaster oven pan with foil, didn't you?

Remember those old coiled coffee cup heaters? If you can find one, they work just fine for cups of soup, consomme, or what have you.

Toaster ovens are a lot more versatile than most people give them credit for, and will do nearly everything a conventional oven will do if you just modify size, shape and cooking time.

Just remember to do those biscuits in a LOW oven, otherwise you get crunchy tops and bottoms and a nearly raw middle.

offers to feed you:) and to enjoy quiet meals OUT...Camp-cooking and doing dishes in a bathtub is a PITA..a royal one..

OTOH...salads with ham/turkey can be a mal, and require little prep or clean up :) Paper plates can be your best friend..and the more finger foods the better:)

a microwave could help out too..The food is not as imaginative, but you could exist with frozen dinners & salads for a while:)

Congrats on your new kitchen.. we are heading into that territory as soon as I make up my mind on countertops and my husband gets his butt in gear and designs it:)

5. How about getting a little two burner portable electric cooktop?
I got one several years ago at Target or K-Mart. This way you can use a fry pan if you want. I mean something like this one by Rival.


They can come in handy even later. I use mine outdoors when I want to keep something warm.

Also, there's electric griddles for breakfasts, hamburgers, grilled sandwiches and electric fry pans for frying anywhere.

6. Baby, it's hot outside.
I take it you have a fridge, so cold cuts, cold salads, and chips. Beg borrow or thrift up a breadmaker and make nice loaves of bread (or hit the bakery every day). We always liked cold pork and beans (don't knock 'em till you've tried 'em) and shaved lunch meat sandwiches when it was hot.

I'd be planning sandwiches, deli fried chicken, wraps, french bread pizza (sauce, deli meat, veggies and cheese) crudite, cubes of cheese and other small, easy foods.

8. This won't work for you now...
But your thread did remind me that you can in fact poach salmon fillets on the top rack of your dishwasher. Wrap them in foil and run them through a complete cycle, including a full dry.
