Or Disappearing Apple Cake as my kids liked to call it. They would practically inhale them
1 3/4 cups sifted cake flour 1 teaspoon baking powder 1/2 teaspoon soda 1/2 teaspoon salt 1 cup sugar 1/2 cup melted butter 1 egg buttermilk 1 teaspoon vanilla extract 2 tart apples peeled and sliced thinly 2 tablespoons sugar mixed with 1 tablespoon cinnamon
Sift the flour, baking powder, soda, salt and 1 cup sugar into a mixing bowl. Pour 1/4 Cup of butter into a 1 cup, measuring cup then add the egg. Fill the cup with buttermilk. Pour into the flour mixture and beat vigorously for at least 1 minute or until batter is smooth. Stir in the vanilla. Pour the remaining butter into an oven proof skillet or baking dish. Pour the batter into the skillet then arrange the apples over the top. Sprinkle over the apples with the cinnamon and sugar mixture. Bake in preheated oven at 350 degrees for 35 to 40 minutes. Serve hot or allow cooling. :)
