My creation for today...Country Style Ribs

Country Spare Ribs w/ Cherry Salsa (Crockpot)

Brown spare ribs in canola oil; transfer to crockpot. In oil, saute a chopped onion and a few smashed cloves of garlic until beginning to soften. Add about a cup or two of chicken stock to deglaze the pan. Add a small bottle of mild cherry salsa (see note below). Add some red wine vinegar for zing, and a little sugar to balance. Pour over ribs in crockpot and let it go until dinner. (I like sweet/tangy and pork together, so I'm thinking this should be good. Here's hoping.)

Note: The cherry salsa is made by a company in Michigan in our cherry region (near Traverse City). I bought some when I was on vacation last summer. I am addicted to this stuff. Thankfully I can order it on the Web!

I love to combine fruit and pork. That sounds delish. Can you let us know where to order the cherry salsa from? I'd love to try it and I've never seen it where I live.

2. Sure thing.
It's a company called "Cherry Republic" and they have TONS of cherry products. The salsa is the big knockout for me; that slight sweetness against a salty chip, well, there goes the bag of chips LOL.

4. You're not kidding.
Word of advice, don't ever visit the actual store. It is wicked, I tell you, just wicked! I go nuts there. I'll be in Traverse City for a wedding in a couple of weeks, but I am going to try to resist the pull LOL. ;-)

She's a vegetarian (actually a seafood-atarian - just no meat) so the ribs aren't the issue. The **cherries** are. She's a cherry-anything junkie.

10. Update...post eating!
If you do make this, cut back a bit on the chicken stock. I forgot how much water the ribs give off in a slow cooker, so the resulting sauce was quite bland. You could probably omit it altogether, honestly.

I'll try it again, though, because the pork was wonderfully tender. So I'll just concentrate the flavors next time. :-)
