What can I make with leftover ham?

Original message
What can I make with leftover ham?
This ham is going on to infinity--an endless processsion of ham-based meals. We've already done the scalloped potatoes, the fried ham for breakfast, and the fried rice with ham. What else is there?

1. If there is a bone you could make some delicious ham and bean or split pea soup
ham and cheese omelets, green beans with ham, hammer some boneless chicken breasts out flat roll some thin sliced ham and swiss cheese in them, toothpick the closure, bread them then bake them for delicious chicken cordon blu..or you could wrap it up and re freeze it for a month then pull it back out and start over.

2. what the pipoman said, but you can use sliced ham instead of the bone
in soups or with red beans and rice, here's how I do it

3. Ham is great with Pasta
Ham in Mac and Cheese is my personal favorite. But Ham with Spagetti and Peas in a light white sauce with Parm is fabulous too. It's great in a white lasagna with spinach. It's also rather nice cubed into a red sauce over rice or pasta.

Of course, if you want to be a little more authentic, consider adding seafood and/or poultry and trying the recipes at cooks.com.

5. Here's a favorite of my kid's
I got it out of a BH&G magazine about 30 yrs ago and all of them still request it. I don't know how many times they've called over the years and asked for it. The recipe says it serves 6, but with four kids, I always had to double it. Actually, I still do and my husband loves it cold at midnight.

Harlequin Ham Casserole

1/4 c magarine
1/4 c flour
1 1/2 c milk
1/2 c Miracle Whip or mayo
2 c cooked cubed ham
2 c cooked rice
1/2 c chopped green pepper
1/2 c sliced water chestnuts
1/4 c shredded Parmesan cheese

Make cream sauce with margarine, flour and milk; stir in mayo and remaining ingredients. Pour into 2 qt casserole; cover and bake at 350 for 30 minutes.

7. Colcannon!
I sort of accidentally made this one time and then later found out that it's an actual dish, and now whenever I have ham or corned beef leftover, this is what I do with it, and it's soooo good. I've never followed a recipe, but there are just 3 important ingredients: potatoes, kale and ham/corned beef.

Just make mashed potatoes however you usually do, and then either blanch or saute the kale (chopped), mix with potatoes, and whatever meat (ham) you have, chopped/cubed. Adding garlic while sauteeing the kale is good too

I've made trips to the store just for kale, to make this, that's how addictive it can be :D

8. That sounds really good
Plus, it uses up a good amount of ham. One of the troubles I'm having is that many ham recipes use ham mainly as flavoring, so not much actual ham gets used. Our goal is to use it up before we have to freeze it. I think freezing ruins the texure.

9. Grind it up in a food processor and make a ham salad...
I use a little pickle relish, finely minced onion or shallots, and a little mayo. Sometimes I'll add a little shredded carrot for sweetness and texture. Use it sandwiches or on top of a green salad. I also use leftover ham in frittatas or quiches.

I love ham loaf, but rarely have enough ham leftovers to make it.

It's basically ground ham, ground lean pork, some fresh bread crumbs, egg for binder, and then a vinegar sauce for basting that makes it so delicious.

14. I've never seen it that way...
...but I spose you could. I believe the pork is used so that the finished product isn't quite so salty. Plus the pork adds a bit of fat. You might want to add some milk to your mixture to lighten it a bit and add some moisture. I "grind" the ham in the food processor, not having a regular meat grinder. It works fine. I make fresh bread crumbs in the same processor. Some recipes call for saltine crumbs but that would just add more salt to the ham.

Here's the recipe for the vinegar sauce. Pour half of it over the loaf when it goes in the oven, and then keep basting with the rest.

1 cup brown sugar
1/2 cup apple cider or other vinegar
1/2 cup water
1/2 teaspoon dry mustard

I also remember seeing a recipe for something called "dilly ham balls" that was a ham meatball with a sour cream dill sauce.
