I took a basic yellow cake recipe and increased the eggs to 4. I beat the eggs until they were thick and lemony then I added one cup of solid pack pumpkin, a teaspoon of pumpkin pie spice, 1/3 cup vegetable oil and beat it until everything was combined. Then I added the flour and baking powder. It made 2 really moist layers which I cooled and sliced into two. I filled it with a pecan pumpkin cream cheese mousse using a pudding recipe as the base. I assembled it and then dusted it with confectioners sugar using a lace doily to make a design. I tasted the combination of filling and cake using scraps from the slicing and a bit of the filling. It is yummy. I'll serve it tomorrow for dinner when we have guests. I think I'll drizzle a little caramel sauce on the plate.
