substituting cream cheese for sour cream - when can you do it
thinking stroganoff tonight. have like 8 packages of cream cheese (oops never got around to those christmas cookies) and no packages of sour cream.

If not, any other ideas?

I'd sure use it if that's what I had and didn't want to go out. You don't even need to sour it, but if you really want to, just add a little bit of either lemon juice or vinegar (just a little!).

If you need to thin it out, just mash it up with some milk or water.

edit: course, now I'm second guessing what I just said, wondering if it will separate out and be all granular or something.... but even so, I'd try it to see, although I'd thin it out first just to reduce the chances -- if you can put it in the blender with some milk that's probably the best way to make sure it incorporates without separating. I think...

2. it might not be tart enough
so taste, and if it needs a little thinning, try lemon juice or other acid, used with a very light hand.
