Tried two new recipes today.
I would highly recommend them both.

First, was this one:

I did modify it a little. Used 1/2 w.w. pastry flour and 1/2 unbleached white all purpose. Also used
1 c. granny smith apples and 1 c. bartlett pear, and added 1/2 c. or so chopped mission figs. I also added chopped pecans to the topping but didn't make the glaze.

The second one:

Very good cookie! I followed some of the other reviewers suggestions and upped the flour and PB by
1/2 c. each. Also used the w.w. pastry/unbleached white flour mixture here. Nice soft cookies about the size of the bottom of a standard drinking glass, 3 1/2 dozen. Hadn't had a good PB cookie in a while and these filled the bill nicely!

I don't have unsalted butter, can I use regular and decrease the salt a bit?

and didn't decrease the salt any. They taste great! Enjoy!

3. did you add the vanilla like another person suggested?
that sounds like a good addition with the extra flour and pnut butter

but then I forgot. Duh! And, yes, that would have been a good addition.

I did sprinkle the tops with sugar rather than roll them in it, as someone esle suggested, tho. I usually do that with molasses cookies.

These are a nice soft cookie, not very crumby. I made them into larger balls and baked them for 9 mins. If you make them smaller, about 7 mins. would be better, depending on your oven.

7. ok the cookie dough is in the fridge to bake in a few
I used 1 1/2 cup pnbutter and 3 cups flour and added 1 tsp vanilla and decreased salt to 1/4 tsp with salted butter

reviews in a couple hours.....

like them. They seem almost kind of velvety, they're so smooth. I used the Smucker's Natural Smooth. Peanut butter cookies aren't fancy but when you want one, you want one! LOL

I do like to search allrecipes.com for simpler things. And I always read a good many of the reviews before starting one that sounds good. Many times other folks come up with fixes or changes that make a big difference, such as in this one.

11. yes, most pnb cookie recipes are too crumbly
this one is perfect!

you and I probably need to be phone buddies, we seem to have a lot in common :rofl:
