The chicken was way, way better this time

I tried again today. Pretty much the same prep as last time. Same procedure. Except the cooker had no ash in it.

That made all the difference. The book says 1:15 for the cook time. I went 1:25 before I opened it.

The chicken was a delightful golden brown, but not crispy. That said, the skin was super delicious. Very smoky and the rub was a nice one.

The breast meat was still moist and the thigh joints were fully cooked. Kind of a poultry miracle, really.
