Sorry I missed the thread last night. I took a nap about 6:00 and was just too warm and cozy to get out of bed. I watched Paperclips instead of KO, since I knew it was all old stuff and hubby hadn't seen it before. It's such a wonderful movie.

I doubt I'll have any this year. I used to put applesauce, sour cream and ketchup on my plate and alternate among them, as I loved them all and couldn't choose just one.

I had ketchup on one side and applesauce on the other. :rofl:

I may have just inspired myself to make some. Not really sure if I want to grate the potatoes. Maybe a mix. :)

If you click on the link "Latke Recipes" there are others, but here's the classic. It's best not to get too fancy. :)

Ingredients

4 large potatoes
1 medium onion
1 egg, beaten
2 tablespoons Matzo meal, corn meal, or flour
salt to taste
2 tablespoons vegetable oil (for less oily latkes), or enough oil to fill the pan to about 1/4 inch (1/2 cm).
applesauce and/or sour cream

Procedure

Peel potatoes and onion and grate.
Optionally soak the resulting mixture in water, or squeeze it in a dishtowel, in order to remove excess starch.
Mix potato and onion with egg, meal, and salt.
Heat oil in a 10" pan over medium heat until it is quite hot. Drop 1-2 tablespoons of the potato mixture onto the pan per pancake.

Turn once to allow both sides to fry. Allow 10-15 minutes total.

Serve with applesauce and/or sour cream as a topping.

Serves four.

The mix is never as good as from scratch. My mother used to make really good ones, but not so much anymore. I'm way to lazy. I think I only made them once myself, when we were living in New York and I wasn't near my mother.

We just stopped for deli on the way home from the movies, and I realized after I had eaten my turkey sandwich that I should have gotten latkes. Probably better that I didn't -- way too many calories and at the deli they're usually pretty thick. I like them thin and crispy.

We're doing our Christmas on Wednesday or Thursday, at Mom & Dad's. The whole darn family will be there, too. :)

They just call them potato pancakes here. One of the local restaurants serves them as an option with fish fry.
