Lay's is changing the shape of salt crystals for a better chip
Yeah, an improvement in the junkiest of junk foods is pretty far down on the scale of things that matter. But it does seem like it's a good idea, maybe one that can be applied to the boxes of salt we use in our homes:
The salt crystals on potato chips only dissolve about 20 percent of the way on the tongue, while the center of each tiny cube-shaped crystal remains intact until after it's swallowed. Thus, most of the salt you're eating on your chips is not contributing to the taste of the chip, but it is dissolving further down your digestive tract and causing whatever the FDA alleges that increased dietary sodium intake causes.

The redesigned salt crystal, with more surface area, should dissolve completely on the tongue, thus theoretically allowing each chip to taste just as salty with only 20 percent as much salt.

on the process of modifying the salt crystal this way. Then I would think that they would be able to sell their modified salt crystal to every other business that utilizes salt in foods in any way and control that market. This is really smart thinking and could save millions of lives from heart disease related to excessive salt consumption. Hope it hits the market real soon.

9. Very cool...unless, of course...
...it is later found that the "re-engineered" salt crystals have some unforeseen side-effect that causes cancer or something.

13. If it is just a different shape, that shouldn't be possible
When they dissolve, they lose their matrix anyway. Now if they had to use some weird chemical binder to force the matrix to form in such a way... But thankfully, that doesn't seem to be the case.

19. Good cause. The research I don't understand has to do
with how to avoid making the brown spots (not related to overcooking) on the chips. Yes, there is govt sponsored research on potato chip appearance. I figure it is to keep some folks employed until their more fruitful research projects get the green light.
